Sausage Bread Pudding – The Great Crockpot Challenge

Sausage Bread Pudding RawMy son took the challenge again this afternoon and decided to make Sausage Bread Pudding for supper.  Sometimes a light supper is jus what the doctor ordered.  It was delicious.

4 Eggs
2 cups of milk
1/4 tsp. of black pepper
1/4 tsp. crushed dried thyme
1/8 tsp. crushed red pepper flakes
1 package of breakfast sausages
3/4 cup shredded cheese
2 cups of day-old bread cubes

 

Instructions

Sausage Bread Pudding Crock PotBeat eggs in large bowl.  Add milk, salt, pepper, thyme, and pepper flakes.  Stir well.  Stir in sausage, cheese, and bread.  Press bread into egg mixture.  Set aside for 10 minutes or until bread has absorbed.

Generously butter 2-quart backing dish that fits inside your crock-pot  Pour sausage mixture into dish.  Cover dish with buttered foil, butter side down.

Pour 1 inch of hot water into crock-pot slow cooker  Add baking dish.  Cover, cook on low 4 to 5 hours or until knife inserted comes out clean.
